NUTMEG STATE POT PIE WITH CHEDDAR BISCUIT TOP

Ingredients (serves 4–6)

  • 3 cups shredded rotisserie chicken (or turkey)

  • 2 Tbsp butter + 1 Tbsp olive oil

  • 1 medium onion, 2 carrots, 2 celery stalks—diced

  • 8 oz mushrooms, sliced (optional but great)

  • 1 tsp chopped fresh sage, ½ tsp dried thyme

  • ¼ tsp freshly grated nutmeg (go light—just a hint)

  • ¼ cup all-purpose flour

  • 1 cup apple cider (not vinegar)

  • 1½ cups low-sodium chicken broth

  • ½ cup heavy cream (or whole milk)

  • 1 cup frozen peas, salt & pepper

Cheddar–Chive Biscuit Top

  • 1¼ cups flour, 2 tsp baking powder, ½ tsp salt

  • 4 Tbsp cold butter, cubed

  • ½ cup shredded sharp white cheddar

  • 2 Tbsp chopped chives

  • ¾ cup buttermilk (or milk + squeeze of lemon)

  • Optional brush: 1 Tbsp melted butter + 1 tsp maple syrup

Directions

  1. Heat oven to 425°F. In a large ovenproof skillet, sauté onion, carrots, celery in butter/oil 6–8 min; add mushrooms 3 min. Stir in sage, thyme, nutmeg, salt/pepper.

  2. Sprinkle in ¼ cup flour; cook 1 min. Whisk in cider, then broth; simmer 3–4 min till slightly thick. Stir in cream, chicken, peas. Taste and adjust.

  3. Biscuits: Mix dry ingredients, cut in butter to pebble-size, fold in cheddar/chives, then buttermilk. Drop 8–10 mounds over filling.

  4. Bake 18–22 min until biscuits are golden and filling bubbles. Brush tops with maple butter if using. Rest 10 min.

CT twists: add sweet corn in summer, swap turkey after Thanksgiving, or a splash more cider for extra orchard vibes.

Canterbury | Old Home Day | 11am-4pm - Celebrate everything great about Canterbury, with this annual extravaganza on the Town Green (Corner of Rt 169 and Rt 14). Free parking at Baldwin School, with shuttles transporting all day. 30+ local nonprofits & vendors, food trucks, historical re-enactors/demonstrators, historical maritime music (who doesn’t love a sea shanty?), woodcarving demonstration, open fire cooking demo, the very fun Scarecrow contest, plenty of kids activities, and the very popular pies for sale (including some pot pies!).

CARGILL FALLS:
THE 40-FOOT DROP THAT BUILT PUTNAM

If you were puzzling over “Cargill Falls” in last week’s word scramble, here’s the scoop: tucked right in the middle of Putnam, this 40-foot drop on the Quinebaug River has been powering industry since the late 1700s. The falls were the reason Danielson brothers and other early manufacturers planted textile mills here, turning what was once a sleepy stretch of river into one of Connecticut’s busiest mill villages. You can still see the old brick shells of the mills lining the banks, a reminder that water was the original electricity.

Cargill Falls isn’t just an industrial relic, it’s woven into the town’s identity. The Quinebaug roars through with a kind of rugged energy, the same current that built Putnam’s reputation as a manufacturing hub in the 19th century. Today, the falls are a scenic backdrop for anyone strolling downtown or grabbing a coffee nearby, a place where you can stand and picture the noise, steam, and hustle that once made this little corner of Windham County tick.
